How about make one that is low-fat?
Other than the junk in the mix (Mix…not from scratch…I didn’t have THAT much time to bake this Monday..sheezz!), this is pretty darn healthy.
Take a box of cake mix and add 16oz of organic pumpkin. Not the stuff for pie but the actual pumpkin.
If you want to make more of a dough-y, brownie confection, then use devil’s food mix.
If you’d like it more ‘cake-like’ then I’d would ALSO add 1 C of water and 2 egg whites.
That’s it.
Throw it in the oven at 325 or 350 (depending on your cookware and oven) for 40-50mins. Do the ol’ toothpick test for doneness and VOILA!
Eat your heart out!
** (And when I say “cake,” I really mean FROSTING. Not that whipped sh*t but really great buttercream frosting.)
